Chilli Seafood Stir-fry

Chilli Seafood Stir-fry



Ingredients

250g fish fillets such as cod, monkfish or tuna
8 - 12 mussels
1 medium sized cooked crab
100g squid strips or pieces
100g uncooked prawns
8 - 12 scallops
2 cloves garlic chopped
1 tablespn chopped coriander
3 tablespn vegetable oil
3 large fresh chillies chopped
3 tablespns oyster sauce
3 tablespns fish sauce
1 onion sliced
2 shallots sliced
1 red capsicum / pepper
Fresh herbs to garnish
1 lime cut into wedges

Method

Wash and prepare seafood, cutting fillets into smaller pieces. Scrub the mussels, take limbs off crab and crack shells so it is easier to get at flesh

Make a paste in thr food processor from garlic, chillies and coriander

Heat the oil in a wok and add the paste, cook over medium heat for 2 minutes to allow flavours to release

Add the seafood and stir-fry for a few minutes

Add the oyster sauce and fish sauce, cover and simmer for a few minutes

Add capsicum, onion and shallots, stir fry for another 2 minutes, remove from heat and place in serving dish, garnish with fresh herbs and lime wedges, serve with rice
Serves 4
